One common theme you will hear frequently this year is simple, simple, simple. With three kids, a husband with a demanding job, working at home myself, life gets a bit demanding and exhausting at times. This year, I plan to focus on simplifying things a little at a time, starting with cooking! That’s why I reached out to some talented dietitians who know how to cook healthy yet still delicious side dishes. I can’t wait to try several of these myself!
Whether or not you’re into making New Year’s resolutions, I hope everyone has started 2016 on a positive note. Personally, I don’t focus heavily on New Year’s resolutions because I try to set goals and work on things throughout the year and I also don’t like to put the pressure on myself. This year is also starting a bit differently since I have a hernia surgery scheduled in two weeks so I’m currently trying to recover from an awful cold/flu bug and focus on getting back into the simple routine of life. Whatever your 2016 goals are I hope these recipes inspire you to cook a few more veggies without consuming too much time.
