Today is my oldest son’s first day back to school. I have to say we had a blast the first week he was off with the excitement of Christmas and all.
However, this past week has been an extremely long week. We are still not 100% moved in or settled into our new house.
I know, it shouldn’t be a surprise since we’ve barely been in this house a month. And Christmas was right in the middle of it all.
I just like to get everything settled as quickly as possible. So it’s driving me a little nuts for the time being. Also, I need to make time to blog!
Regardless, this year I’m still focused on making time for things I enjoy doing…this includes WITH my children and WITHOUT.
I need more without, but I also need more focused time with my kids. Even though I’m a stay-at-home mom, I tend to not spend as much quality time with them as I’d like.
This is one of many reasons why I’ll continue to make more easy prep meals that don’t keep me in the kitchen very long. I’d much rather be having fun, exercising or just spending my time elsewhere!
Does anyone else agree??
Here’s just a sneak peek into how we’re loving our home so far! The pictures are from about two weeks ago out behind our house, until the weather got unseasonably warm here (even reached the 50’s!) and the lake melted.
All three of my kids LOVE skating and JP and I even stayed out past dusk to play some ice hockey – SO much fun! Bring on more cold weather Michigan!
I would NOT have wished it to be cold before, I’ve wished for snow for snow skiing, but never for it to be cold and stay cold. It’s amazing how a change of scenery can do that to you!

Slow Cooker Cheesy Chicken & Brown Rice
Ingredients
- 1 pound chicken tenderloins about 8 tenderloins
- 2 cups frozen mixed vegetables I thawed mine slightly first
- 1 red onion chopped
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- black pepper and salt to taste
- 1 10 1/2 ounce can cream of chicken soup
- 1 cup skim milk
- 2 cups cooked brown rice
- 2 cups 2% shredded sharp cheddar cheese
Instructions
- Place all ingredients except the milk, rice and cheese in the slow cooker.
- Cook for 8 hours on low or 4 hours on high.
- Remove chicken and shred, then place back into the slow cooker along with the milk, rice and cheese.
- Cook until cheese is thoroughly melted.
