The slow cooker strikes again!

I am constantly on the lookout for a variety of slow cooker meals that involve very little prep, contain a good amount of veggies and protein and of course something my entire family will enjoy.

However, taste buds seem to vary depending on the day, week and the mood of my children so you never know. 

When it comes to Mexican food for my husband and I, our opinions have varied greatly over the years.

Dan has always been a big fan of Mexican food. Personally, I enjoy homemade Mexican food (as evidenced by my long list of Mexican-inspired blog recipes).

But Mexican restaurants were never on my radar when it came to eating out…until recently.

We have an authentic Mexican restaurant about a mile from our house which I am constantly craving. I typically order a la cart and order some combination of chicken enchilada/chicken quesadilla/tostada/chalupa/tamales.

This led to the inspiration of today’s simple shredded Mexican chicken recipe.

When eating Mexican foods there are several ways to make them more nutritious.

Start by adding more vegetables to whatever dish you’re making. I almost always add peppers and onions, and salsa is a fantastic addition to just about anything Mexican.

Also, guacamole is a nutritious choice and is high in healthy fats.

There are also plenty of whole wheat tortillas available at most major grocery stores. Just keep in mind portion control when it comes to the amount of cheese and sour cream you add to your meal to keep calories and saturated fat in check.

Slow Cooker Shredded Mexican Chicken

Prep Time 15 minutes
Cook Time 5 hours
Total Time 5 hours 15 minutes

Ingredients
  

  • 8 chicken tenderloins about 2 pounds
  • 1 medium onion chopped
  • 1 red pepper chopped
  • 3 tablespoons taco seasoning
  • 1 4 ounce can green chilies
  • 1 cup salsa
  • 1 13.5 ounce can black beans, drained and rinsed
  • Toppings: cheddar cheese sour cream, guacamole
  • Corn tortillas optional

Instructions
 

  • Add all ingredients to slow cooker. Cook on high for 4-5 hours or low for 7-8 hours.
  • Remove chicken and shred with two forks. And shredded chicken back into slow cooker. Cook for another 30 minutes.
  • Add to tortillas or serve with tortilla chips.
  • Add toppings as desired.
