And we have officially begun the “typical” Michigan spring. Remember when I was talking about how we had a few 80 degree days and were having a BLAST outdoors? Well this past week has been miserable…raining and in the 40’s all week long. And yes, growing up in Michigan I should be used to the sporadic weather that occurs all year round, but a change of 20 degrees from one day to the next is hard to every get used to.
Anyways, I have warm weather on the brain not only because it’s May and we should expect it to stick around soon, but also because I’m dying to enjoy our backyard and seriously experiment with grilling dishes this spring and summer. This recipe is the first of many you’ll be seeing as I trying to experiment with grilling recipes of all kinds.
I also plan to cook plenty of vegetables outside. It’s super easy and simple clean up. This time I just sprayed aluminum foil with olive oil and tossed the peppers and onions on to the foil and grilled them over medium heat.
Dietitian’s Dish
Steak for me is one of the trickiest to get right. Thankfully I’ve learned to marinate steak long enough to allow the steak to absorb the delicious flavors. Just don’t forget to toss out the unused marinade. And like I’ve said before if you don’t have a meat thermometer, buy one! Here are the temperatures to measure the proper doneness: Medium Rare is 145°F, Medium 160°F and Well Done is 170°F.

Avocado Lime Grilled Steak Fajitas
Ingredients
- 1 pound top sirloin steak
- marinade:
- 3 tablespoons olive oil
- 2 teaspoons minced garlic
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 teaspoon chili powder
- juice from 1 lime about 2 tablespoons
- salt and black pepper to taste
- soft shell tortillas
- 1 avocado sliced
- peppers red, green, yellow or orange,sliced
- 1 onion sliced
Instructions
- Combine marinade in a shallow bowl, add steak. Refrigerate for at least 30 minutes.
- Grill steak for 5-7 minutes, each side, or until desired doneness.
- Slice steak against the grain in strips.
