It’s fall time! To me, that means cozy sweatshirts, football, tailgating, leaf pile jumping for kids and much much more!
We have gorgeous colors in Michigan this time of year with all the trees around us. And even more as you take a drive up north.
So before the winter weather sets in we try to get outside and enjoy the cool, yet comfortable fall weather.
And with cool fall weather comes tailgating and football time! Two of my favorite combos!
I went to a large university and loved tailgating while I was attending. These days, adult “tailgating” has taken on a newer, healthier look.
This includes delicious appetizers like this black bean veggie quesadillas recipe I have created. They are simple and healthy, and can be enjoyed by meat-lovers and veggie-lovers alike!
Simple Steps to Make These Spicy Black Bean Veggie Quesadillas
Check out these simple steps to make this perfect appetizer for tailgating.
Heat a whole sweet potato in the microwave until soft (about 10 minutes).
Coat one side of a tortilla with butter and add sweet potato and cheese to the other side of the tortilla.
Next, add two halves of the MorningStar Farms Spicy Black Bean Veggie Burger and spinach leaves on top.
Fold tortilla in half and grill until quesadilla is thoroughly heated and cheese is melted.
All these steps take only about 10 minutes to make delicious black bean veggie quesadillas that are perfect for tailgating, fall parties or even just for lunch!

Dietitian’s Dish
This recipe is packed full of fiber from whole wheat tortillas, spicy black bean veggie burgers, spinach and sweet potato.
Fiber not only helps you stay fuller longer but consistent fiber intake helps keep your bowels healthy too. The veggie burger also provides a good amount of protein with 10 grams of protein for each burger. A win-win in my book!
Spicy Black Bean Quesadillas
Ingredients
- 2 whole wheat tortillas
- 2 Morningstar Farms Black Bean Veggie Burgers
- 1/2 cup sweet potato
- 1/2 cup spinach leaves 1
- /2 cup shredded 2% Mexican-blend cheese
Instructions
- Microwave sweet potato in a microwave-safe dish for 6-8 minutes on high.
- Remove from microwave, peel and mash with a fork.
- Spread one side of tortillas with butter spread or spray butter.
- Spread one half of the tortilla with 2 tablespoons of the mashed sweet potato and the other half with cheese.
- Place tortilla on a warm skillet.
- Cut veggie patties in half and place two halves on top of the cheese.
- Top patties with a couple of spinach leaves.
- Fold tortillas in half and heat over skillet, flipping to heat both sides even.
- Cook until cheese is melted.

There's something about the sweet potato and black bean combo that I can't get enough of. Love the idea of using a black bean burger in a quesadilla too. Never would have thought of that!
