This Strawberry Quinoa Spinach Salad is full of a variety of veggies and fruit. It also has protein from the quinoa to bring you a satisfying summer meal or side dish!
I’m back with another simple salad option for when you get bored with the same old veggies.
This salad is protein-packed and is great as a side dish or served as a meal. And, I’m loving summertime salads as meals since it means no heating up the kitchen with a hot oven!
After we went strawberry picking at the beginning of July, I gathered a ton of recipe ideas that included strawberries.
By the way, visiting farms in the Metro Detroit area with my kids is one of my favorite kid-friendly activities to do!
It’s not only unique for us who live and are raised in the suburbs, but it also is a great learning experience for the kids to learn how food is actually grown.
Our First “Real” Garden
And speaking of growing foods, we recently upped our garden game. This summer Dan made this awesome mini garden for us.
In this garden, we are growing one cherry tomato plant, one big boy tomato plant and a red pepper plant. It’s definitely a hearty and healthy garden!
And any day we’ll have so many tomatoes we won’t know what to do with them! Ha, that’s not entirely true since 4 out of the 5 of us enjoy them 🙂
And thank goodness for little garden helpers!
Here’s a better close-up of our cherry tomatoes, pepper plant and fruit on the far right. This is also the first year planting fruit, including strawberries, blueberries and raspberries.
We are hoping to have lots of fruit produced next year!
So now it’s about time to think up some more salad recipes containing tomatoes. If you’d like more salad ideas, check out this Greek Yogurt Broccoli Salad along with a ton of other salad ideas.
