This Summer Orzo Pasta Salad is filled with tons of veggies and a delicious homemade red wine vinegarette dressing making it the perfect complement to any meal!
We have immensely enjoyed this summer but are so sad it’s coming to an end quickly. I’m actually back to work this week at my school nutrition job helping to get things rolling for the upcoming school year.
Thankfully we have one more weekend before school starts and then a long Labor Day weekend.
This year and for at least the following two years, our district is starting the week before Labor Day. This makes it seem like the summer is so much shorter!
However, we are absolutely making the most of summer. This August has been especially busy with fun family activities.
Our oldest son turned 8 this month and he wanted to go to a family fun park for his birthday which was a blast for the entire family.
There were many firsts that day including riding in and driving his own go-cart, and his first time on bumper boats and bumper cars.
This brought back so many fun childhood memories that I can’t wait to go back!
Our daughter also learned how to ride a two-wheeler bike so I found a used tag-a-long bike for our youngest which gives us the chance to take longer bike rides than ever before!
So besides getting out and about as much as possible, believe it or not, I’m still trying new recipes.
This Summer Orzo Salad was inspired after I made this delicious Grilled Pork Tenderloin & Strawberry Orzo Salad.

Summer Orzo Pasta Salad
Ingredients
- 8 ounces orzo cooked and cooled
- 1 cup cherry tomatoes
- 1 bell pepper chopped
- 1/2 cup mini cucumbers chopped
- 1/4 cup red onion diced
- 1/2 cup feta cheese
- 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
Dressing
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 2 tablespoons lemon
- 2 teaspoons honey
- black pepper and salt to taste
Instructions
- Cook orzo according to directions. Rinse with cold water.
- Combine all dressing ingredients in a small bowl, whisk until well combined.
- In a large bowl combine remaining ingredients (orzo, tomatoes, pepper, cucumbers, red onion, feta cheese and garbanzo beans.
- Toss salad with dressing.
- Refrigerate until ready to serve.
