I’m thankful for…
- An extremely hard working and loving husband and father to our 3 children.
- Healthy and happy children that I am fortunate to be a stay-at-home mom to.
- Parents who do anything and everything for me and my family.
- Fantastic friends who always keep me laughing (and sane as a SAHM) and who are willing to help out whenever needed.
- A healthy and able body to run/bike/swim or do whatever I desire it to do (to an extent!).
And I know I’m missing a gazillion other things I’m thankful for but onto the food…
I’m also thankful for . . . CHOCOLATE AND PEANUT BUTTER!
If anyone every asks what my favorite food is, I don’t hesitate: it’s chocolate and peanut butter ANYTHING. Not a difficult question. Also if you know me, I’ve never said that anything was TOO rich before, but after making these bars I may admitted to my husband these bars were almost too rich. This basically means that these bars are just that delicious!
I used chocolate and cinnamon sugar graham crackers because that’s what I had on hand, but of course you could use any kind you’d like. Also, if you prefer creamy peanut butter, use that. This recipe is quite flexible. I mean, how can you really mess up a recipe when its main ingredients are chocolate and peanut butter anyways?
I hope everyone has an enjoyable and restful Thanksgiving. As for me, I’m headed to bed early tonight for a 5 am wake up call for our entire family. We’ll be running the Turkey Trot (5K) as a family (2 jogging strollers). And J will also be participating in his first race (1 mile) this year! HAPPY THANKSGIVING!
No-Bake Chocolate Peanut Butter Bar
INGREDIENTS
1 cup crunchy peanut butter
1 cup butter, salted
2 cups powdered sugar
2 cups graham cracker crumbs (any flavor)
2 cups chocolate chips
¼ tsp salt
DIRECTIONS
Mix all ingredients except chocolate chips in a bowl until combined. Place in a 9”x12” or 9”x13” pan lined with parchment paper or sprayed with cooking spray. Melt chocolate chips in microwave slowly (at about 50%) until melted. Spread melted chocolate over top of the peanut butter layer. Refrigerate for at least an hour before slicing.

JP had a blast at his first race! But when it came time to run our race E was cold and tired so we improvised our race and finished at our car :)
