This Turkey Kielbasa and Cabbage Skillet meal is a light and simple weeknight meal filled with healthy and delicious ingredients!

We spent quite a bit of time together along with her daughter and adorable baby boy. We had the chance to go to one of our local cider mills in November and it was 70 degrees! Now if you know anything about Michigan, this kind of weather is unheard of! However, as I write this it’s around 20 degrees but we’re used to that in Michigan. That’s exactly why we spent as much time outside as possible.
Thankfully we took advantage of the warm weather and the kids enjoyed a day filled with visiting farm animals, climbing on stacks of hay and playing on toy tractors.
And when we were there the cider mill was selling huge green cabbages for $2.00. I couldn’t resist and thus came up with this cabbage skillet recipe to use up some of the abundance of cabbage.
My favorite part is this recipe was simple to make and the kids enjoyed it (at least the turkey part). Yes, the “combined” meals issue is still going strong but I’m not going to NOT cook foods together because my kids have a problem with it.
Dietitian’s Dish
Cabbage is low in calories with only 20 calories per 1/2 cup of cooked cabbage. It’s also a great addition to skillet meals since it should be cooked only to crisp-tender to maintain its nutrients. Cabbage is also an excellent source of vitamin C and K as well as antioxidants.
Turkey Kielbasa and Cabbage Skillet
Ingredients
- 14 ounce turkey kielbasa cut into 1/4 inch slices
- 2 tablespoons olive oil divided
- 1 teaspoon minced garlic
- 1 medium onion chopped
- 1 green pepper chopped
- 1 tablespoon sugar
- salt and pepper to taste
- 2 teaspoons rice wine vinegar
- 2 teaspoons Dijon mustard
- 4-6 cups green cabbage chopped
- 2 teaspoons caraway seeds
- 4 red skin potatoes chopped
- 1/2 cup water
Instructions
- Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Add chopped potatoes and sauté until tender.
- In another large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add kielbasa and saute until cooked thoroughly (about 10 minutes).
- Add onions, pepper, minced garlic, sugar, salt, pepper, vinegar, mustard, cabbage and water.
- Simmer for 15-20 minutes then add caraway seeds and cooked potatoes. Continue simmering for another 10 minutes or until vegetables are tender and no liquid remains.
