Unstuffed Cabbage Rolls

These time-saver healthy Unstuffed Cabbage Rolls are full of vegetables, lean beef and topped with two types of cheese for a delicious yet no-fuss dinner.

 My husband and I recently attended a wedding that he officiated. No, he’s not a pastor by trade, but one of his best friends asked him to marry them and he was honored to do so.

For the rehearsal dinner, we ate at an authentic German restaurant where Dan ordered cabbage rolls.  

I didn’t think I was a big fan of cabbage rolls until I tried his.

And boy were they delicious! So this recipe is my way of making cabbage rolls but with a lot less labor involved, hence the unstuffed version.

You may wonder why I’m using 2% and part-skim cheese. Well when it comes to dairy products, I try to minimize the amount of saturated fat I cook with (most of the time).

Unstuffed Cabbage Rolls

A simpler yet still delicious version of stuffed cabbage rolls!
Prep Time 30 minutes
Cook Time 1 hour 10 minutes

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound lean or extra lean ground beef
  • 1 medium onion chopped
  • 1 minced garlic clove
  • 1 can 8 ounces tomato sauce
  • 1 can 15 ounce diced tomatoes
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil finely chopped
  • 1 teaspoon dried parsley
  • 1 green cabbage chopped
  • 1 cup water
  • 1 1/2 cups part-skim mozzarella cheese
  • 1/2 cup 2% sharp cheddar cheese
  • 1 cup cooked brown rice

Instructions
 

  • Preheat oven to 350°F. Coat a 9 x 13 x 2 inch casserole dish with non-stick cooking spray.
  • In a large skillet heat olive oil over medium heat.
  • Add minced garlic, onions and beef.
  • Cook until beef is cooked, onions are tender and liquid is absorbed.
  • Add in tomato sauce and diced tomatoes and stir well.
  • Add lemon juice, sugar, black pepper, basil and parsley and stir well.
  • Add chopped cabbage and water to skillet.
  • Bring to a boil then reduce to a simmer for 25-30 minutes or until cabbage is tender and liquid is almost completely absorbed.
  • Stir in cooked brown rice.
  • Add mixture to casserole dish, cover with aluminum foil and bake for 30 minutes.
  • Remove aluminum foil and sprinkle with mozzarella and cheddar cheese.
  • Bake for another 10 minutes or until cheese is melted.
