These times are absolutely unprecedented, challenging and worrisome for much of the world. I personally am so grateful for all those essential workers, from healthcare workers to grocery store attendants and everyone in between. We could not be getting through this pandemic without these dedicated employees.
While I am an extrovert who can’t stand being at home for long periods of time, I am really focusing on taking it one day at a time.
I am focused on finding joy in everyday things that we would normally miss out on due to crazy work and school schedules, and all the extracurricular activities.
I am NOT saying that it’s all rainbows and sunshine in our house. My husband and I are more stressed than normal, trying to do our full-time jobs while still sticking to an education schedule for our three elementary-age children.
But, we are spending SO much more time together than we have in years including exercising daily together (I’m walking 1-3 times per day – slowly getting back into running due to a knee injury).
Speaking of family time, I have seen this quote shared many times across social media over the past few weeks and it sure resonates with me.
Over the past few weeks, I’ve thought a lot about what I am grateful for. This will be an ongoing list but for now, it includes:
- Family mealtime, especially dinner
- Neighborhood walks and bike rides
- Stable jobs
- Neighbors out and about – more than I have ever seen (while social distancing)
- Dr. Anthony Fauci -scientific facts, experienced, truthful
- A warm house, plenty of food
- My children’s teachers – all engaging and providing tons of educational and interactive materials for our kids
- And I am especially grateful for every essential worker who is helping all of us stay healthy while they risk their health and sacrifice their time with their loved ones: healthcare workers and all hospital staff, grocery store workers, police, fire and EMS, and all those volunteers stepping up to help those in need.
I’ve also had more opportunities to cook and bake with my kids. They generally love helping out but we often don’t have the time, well until 2020 happened.
So we decided to make these delicious Whole Grain Oatmeal Cocoa Muffins and they were a hit!

Oatmeal Cocoa Muffins
Ingredients
- 1 cup quick oats
- 1 cup buttermilk I rarely have buttermilk on hand so my substitute is 1 T white vinegar poured into a glass measuring cup, then fill remaining with skim milk
- 1/3 cup butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1 medium ripe banana, mashed
- 1 cup white whole wheat flour
- 1/4 cup cocoa powder
- 1/4 cup flaxseed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup mini chocolate chips Add more if desired, I rarely measure chocolate chips
Instructions
- In a small bowl, combine oats and buttermilk. Stir until combined and set aside for about 20 minutes.
- Preheat oven to 400 F. Coat 16 muffin tins with non-stick cooking spray.
- In a large bowl, beat butter, brown sugar and egg together until well combined. Add banana and beat well.
- Stir in oats mixture followed by flour, cocoa, baking powder, baking soda and salt.
- Stir in chocolate chips.
- Fill muffin tins evenly with mixture (about 2/3 full) and bake for about 16 minutes or until a toothpick comes out clean.

Me: pleasantly surprised how moist and chocolatey it was especially since I changed a few things. And in baking, it’s always a bit tricky when changing ingredients (compared to changes made while cooking).
