Wild Blueberries and Pomegranate Smoothie

This smoothie, sweetened by fruit and yogurt, is full of intense delicious flavors that’s perfect for breakfast or an afternoon snack!

 I find it quite amusing that I haven’t been a big fan of smoothies until now. I’m not sure why except that I thought it was too time consuming and it meant one more appliance to clean. Well, when I was invited to participate in this smoothie contest by fellow dietitian Kara Lydon I thought I’d give smoothies a try again. I am SO glad I did! Not only do two out of my three kids LOVE smoothies, they take about 5 minutes to make (and that includes clean up!). Since I started thinking about smoothies to make for this contest I have made them every day for the past 5 days.

And my four year old is going through an “everything is gross except bread, crackers and pizza” stage so when she tried these and LOVED them I was thrilled! Of course, I’ve become accustomed to kids preferences changing from time to time so I’m not worried in the least about her nutrition, but regardless I was thrilled she was interested in trying something new.

And each time I made the smoothies I changed things a little every time and they turned out great no matter what I did. The basics are simple when it comes to smoothies. Basically all you need is frozen fruit, liquid or yogurt, greens, and seeds. My 5 year old had so much fun with the smoothies that he wanted to try one of his own creations that included cherry tomatoes, orange juice, wild blueberries and spinach (not to my liking but he drank the entire thing!). Just goes to show that helping in the kitchen can definitely help kids try new foods!

Dietitian’s Dish

I learned recently that wild blueberries are very different than regular blueberries you purchase in the produce section of your local grocery store. Wild blueberries come frozen, have twice the antioxidant capacity of regular blueberries and have a more intense blueberry flavor. 

Wild Blueberries and Pomegranate Smoothie

A delicious smoothie filled with fiber and calcium!

Ingredients
  

  • 1 frozen banana sliced
  • 1/2 cup frozen wild blueberries
  • 1/4 cup pomegranate arils
  • 1 cup loose spinach leaves
  • 2 teaspoons chia seeds
  • 1/2 cup vanilla yogurt
  • 1/2 cup skim milk

Instructions
 

  • Add all ingredients to blender and blend until desired texture.
  • Serve immediately.

Hehehe I can't believe your little one made and DRANK one with cherry tomatoes! I think I'll try your recipe instead. I'll be looking for wild blueberries on my shopping trip this weekend!
