Cinnamon Apple Oat Energy Bites

Ingredients
  

  • 1/2 cup dates, pitted (about 5)
  • 1/2 cup almonds, unsalted
  • 1 medium apple, finely chopped
  • 1 cup old fashioned oats
  • 1 teaspoon vanilla extract
  • 1/4 cup honey

Optional

  • 1 teaspoon cinnamon
  • 3 tablespoons white granulated sugar

Instructions
 

  • Place the first 3 ingredients in a food processor or blender. Blend for about 5 seconds or until ingredients are evenly chopped.
  • Add remaining ingredients and blend until smooth.
  • Place in refrigerator for at least 1 hour. Remove from refrigerator and form into 1-inch balls.
  • Optional: combine 1 teaspoon cinnamon with 3tablespoons sugar and roll each ball into cinnamon sugar mix.
  • Keep sealed in a container in refrigerator.
