Easy Lentil Soup with Spinach

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 tablespoons minced garlic
  • 2 cups lentils (red and/or green)
  • 8 cups chicken broth (or vegetable broth)
  • 1 1/2 teaspoons turmeric
  • 1 1/2 teaspoons cumin
  • 2 tablespoons dried parsley
  • 3 cups fresh spinach
  • 1 tablespoon lemon juice

Instructions
 

  • Over medium heat, add oil to a large pot or Dutch Oven. Add the onions, celery, carrots and garlic, and sautĂ© for about 5-7 minutes, stirring often.
  • Add the lentils, broth, turmeric and cumin.
  • Bring to a boil, reduce heat and cover. Cook on low for about 30 minutes, stirring occasionally.
  • Turn off the heat and add the parsley, spinach and lemon juice.
