Ingredients

olive oil

medium onion, chopped

cup
celery, chopped
1
cup
carrots, chopped

tablespoons
minced garlic

cups
lentils (red and/or green)
8
cups
chicken broth
(or vegetable broth)
1 1/2
teaspoons
turmeric
1 1/2
teaspoons
cumin
2
tablespoons
dried parsley
3
cups
fresh spinach

tablespoon
lemon juice
Instructions
Over medium heat, add oil to a large pot or Dutch Oven. Add the onions, celery, carrots and garlic, and sauté for about 5-7 minutes, stirring often.
Add the lentils, broth, turmeric and cumin.
Bring to a boil, reduce heat and cover. Cook on low for about 30 minutes, stirring occasionally.
Turn off the heat and add the parsley, spinach and lemon juice.
