Instructions
Scrub and remove any dirt from potatoes.
Chop potatoes into equal-size parts (about 1-inch cubes).
Add potato cubes to a 2 or 2 1/2-quart microwave-safe dish. Add about 1/4 cup of water to the dish.
Cover the dish and cook in the microwave for 10 minutes on high. Be careful when removing, it will be very hot!
Preheat oven to 400 F.
Once potatoes are done in microwave, carefully pour out the water, leaving the potatoes in the dish. Add the olive oil and spices to the dish and stir well.
Line an 11 x 17-inch rimmed baking pan with aluminum foil and spray with non-stick cooking spray.
Add the seasoned potatoes to the baking pan in a single layer.
Bake in the oven for 30 minutes, flip the potatoes and bake for an additional 15 minutes.
